Korerima (ኮረሪማ)
Korerima (ኮረሪማ) is Ethiopian cardamom. It is the seed of a cardamom plant that grows in Ethiopia, and one of the most important spices in the Ethiopian kitchen. It is a different plant from the green cardamom sold in most grocery stores. It is also spelled kororima or korarima.

What does korerima taste like?
Warm, smoky and floral, with a slight peppery bite. It is deeper and less sweet than green cardamom.
What is korerima used for?
If you are making kitfo, niter kibbeh or spiced ayib, you need korerima. It is what gives these dishes their aroma.
- Kitfo, the dish korerima is used in most
- Niter kibbeh, the Ethiopian spiced butter
- Spiced ayib, the fresh Ethiopian cheese
- Stews, if you like the extra aroma
Can I use korerima in coffee or tea?
Yes. In many parts of the world, cardamom is added to coffee and tea, and korerima works the same way. Crush a few seeds and brew them with your coffee or tea. It is not a common use in Ethiopia, but it gives a warm, smoky aroma that many people enjoy.
Why we sell whole korerima seeds
We remove the pods and everything else and sell only the seeds. We do not grind them. Ground korerima loses its aroma quickly, so the best way to use it is to grind the seeds just before you cook. A mortar and pestle or a small spice grinder works well.
How to store korerima
Keep the jar sealed in a cool, dry place, away from the stove and direct sunlight. Whole seeds keep their aroma much longer than ground korerima. Grind only what you need each time.
