Kitfo Dulet

Kitfo Dulet Recipe ክትፎ ዱለት አሰራር

Lean ground beef in spiced niter kibbeh, eaten raw or lightly cooked, with fresh red onion and green pepper.

What you need

From your kitchen

  • Very lean beef, freshly ground at the butcher or at home
  • Red onions, coarsely ground
  • Green peppers, finely diced
  • Salt (optional)

How to make it

  1. Melt the kibbeh. Put plenty of niter kibbeh in a pan, enough to cover the bottom, just like for kitfo.
  2. Add the spices. Stir in mitmita and korerima, and 1 teaspoon of salt if you like.
  3. Add the beef and mix. Add the freshly ground lean beef and keep mixing.
  4. Cook it the way you like. We normally eat it raw or slightly cooked. If you don't want it raw, cook it longer.
  5. Add onions and peppers at the end. Once the beef is done, stir in the coarsely ground red onions and finely diced green peppers right at the end. Don't cook them. Then serve.

Kitfo dulet is built on the same three as kitfo: our Niter Kibbeh, our Mitmita and whole Korerima.

Good to know

For kitfo and kitfo dulet, we don't buy lean ground beef from the store. It isn't lean or fresh enough for our standard. We buy very lean beef and have it ground at the butcher, or grind it at home.

Ethiopians cook by feel, not by measuring, so treat the amounts as a starting point.
