Ayib

Ayib Recipe አይብ አሰራር

Spiced Ethiopian cheese with niter kibbeh, korerima and mitmita.

What you need

From your kitchen

  • Ayib, or pressed cottage cheese

How to make it

  1. Melt the kibbeh. Put plenty of niter kibbeh in a pan, just like for kitfo, and let it melt.
  2. Add the spices. Once it's melted, stir in crushed korerima and mitmita.
  3. Add the ayib and mix. Add the ayib, or pressed cottage cheese, and mix it into the spiced kibbeh.

Spiced ayib takes three things from our kitchen: our Niter Kibbeh, whole Korerima to crush fresh, and our Mitmita.

Good to know

Ayib is a fresh Ethiopian cheese. If you can't find it, pressed cottage cheese works well. Serve it with kitfo or on its own.

Ethiopians cook by feel, not by measuring, so treat the amounts as a starting point.
