What you need

The Ethiopian essentials

From your kitchen

  • Gomen (collard greens)
  • Onions
  • Oil
  • Garlic
  • Salt
  • Green peppers, sliced

How to make it

  1. Boil the gomen. Boil the collard greens.
  2. Squeeze it. Squeeze out the water.
  3. Chop it. Chop the squeezed gomen in a food processor.
  4. Cook the onions. Put oil in a pan, then add the onions.
  5. Add the gomen. Add the chopped gomen. Since it was squeezed, it cooks down to much less than you started with.
  6. Add garlic, then salt.

Gomen needs only a few simple ingredients. Serve it with our Mitmita on the side, the way we eat it at home.

Good to know

If you are eating gomen on its own, serve mitmita on the side.

Gomen is made with oil, so it is vegan. See more dishes in our Ethiopian vegan food guide.

Ethiopians cook by feel, not by measuring, so treat the amounts as a starting point.
