Dirkosh Firfir

Dirkosh Firfir Recipe ድርቆሽ ፍርፍር አሰራር

Dried injera pieces in berbere sauce. Make it with eggs and niter kibbeh, or leave them out and it's vegan.

What you need

From your kitchen

  • Dirkosh (dried injera pieces)
  • Red onions
  • Oil
  • Tomatoes
  • Garlic
  • Salt
  • Warm water
  • Boiled eggs (optional)

How to make it

  1. Cook the onions. Cook the red onions for a bit.
  2. Add the oil.
  3. Add the tomatoes. Let them cook for a bit.
  4. Add the berbere. Let it cook for a bit.
  5. Add warm water. A little at a time so it doesn't stick, then a bit more water. Not too much.
  6. Add garlic, then salt.
  7. Add boiled eggs (optional). Cut 3 or 4 lines down the length of each egg so it soaks up the sauce, then add them.
  8. Add the dirkosh. Mix it into the sauce.
  9. Finish with niter kibbeh (optional). Stir it in at the end.

Dirkosh firfir is built on its sauce, and the sauce is built on our Berbere. Finish it with our Niter Kibbeh, or leave it out for the vegan version.

Good to know

To make it vegan, leave out the eggs and the niter kibbeh. Everything else stays the same. See more dishes in our Ethiopian vegan food guide.

Ethiopians cook by feel, not by measuring, so treat the amounts as a starting point.
