Chechebsa

Chechebsa Recipe ጨጨብሳ አሰራር

Torn Ethiopian flatbread tossed in niter kibbeh, berbere and mitmita. Also called kita firfir.

What you need

From your kitchen

  • Flour
  • Salt
  • Water
  • Honey (optional)

How to make it

  1. Make the batter. Mix the flour, salt and water into a batter.
  2. Cook the flatbread. Cook it on a flat pita maker for more volume, or in a pan. Flip it once it's ready.
  3. Tear it up. Tear the flatbread into small pieces by hand. If you like them crispy, heat the pieces a little longer.
  4. Spice the kibbeh. Put niter kibbeh in a pan. Once it starts melting, add the berbere and mitmita, about 2 tablespoons of berbere to 1 of mitmita. Use more berbere than mitmita.
  5. Mix in the flatbread. Add the torn pieces and mix until they are coated.
  6. Serve. Drizzle with honey if you like.

Good to know

Chechebsa is also called kita firfir. It is a favourite Ethiopian breakfast, and the honey on top is up to you.

Ethiopians cook by feel, not by measuring, so treat the amounts as a starting point.
